Beetroot banana pancakes

A delicious recipe for gluten/refined sugar free pancakes. A great high protein Breakfast option or a nutritious and nourishing snack.

I just love pancakes. (We’re talking addiction level love here.) Great news for you if you are also a pancake addict – I can share the results of a long term dedicated self interest in learning how to impose nutritional upgrades into them! These ones are healthy. And pink! This is a great breakfast choice if you are planning on an active morning: the pink is thanks to beetroot juice, which has been proven in scientific studies to increase muscle endurance and efficiency in both low and high intensity workouts. Beetroot juice affects blood flow, muscle contraction and even neurotransmission.

The pancakes are a great source of high quality protein, while gluten free and refined sugar free. So much more nutritious and nourishing than pretty pointless old school pancakes, but in my opinion also yummier.  Hope you enjoy them!

Ingredients

  • 2 eggs
  • 2 egg whites (I use Two Chicks, or just separate my own and save the yolks for homemade mayonnaise or meatballs for my children)
  • 3 tbs gluten free oatmeal/oats (finely ground Scottish porridge oats work best. I use Alara)
  • 3 tbs oat bran (I use Bob’s Red Mill)
  • 1x 30g scoop of lean vanilla protein powder (I use Lomax Intelligent Nutrition vanilla lean development)
  • 2 tbs beetroot juice
  • 2 tbs almond milk (I use Plenish)
  • 1 banana
  • 1 tbs ground chia seeds
  • Coconut oil to cook

Method

Blend all ingredients together with a hand blender or in a food processor. Heat a small amount of coconut oil in a non-stick frying pan and fry in pancake sized amounts (approx 3 tbs mixture) one by one, checking there is enough oil for each new pancake (approx. 1 tsp per pancake).

Serve immediately with berries, greek yogurt and a drizzle of maple syrup or your favourite pancake topping!

Serves 1-2 (depending on who is eating them/hunger levels.)
