Tough Mudder

So I did a Tough Mudder last weekend! For those of you who don’t know what that is, it is described as “seriously gruelling” and  “probably the toughest event on the planet” – a 12 mile hill, mud and obstacle course designed to drag you out of your comfort zone by testing your physical strength and stamina, and your mental determination and resilience. There have been over 200 events over 6 countries and the event was founded by a British former anti-terrorism agent (surprise, surprise).  I just read a random stat that there are over 10,000 Tough Mudder tattoos, testament to it being both a badge of honour to be celebrated with pride and to its cult status among aficionados.  I’m going to share a few of my thoughts on it, tell you why you should try one and give you a few training and course tips.

Hidden vegetable tomato sauce

Well, if there’s one thing that every single nutritionist in the whole world ever could agree on, it might be this: vegetables are a great thing! The more (in terms of quantity, quality and variety) that we can include in our diets, the better. I am very fond of lycopene, a phytochemical pigment that gives tomatoes their red colour. Lycopene is thought to have some role in preventing cardiovascular disease and to a lesser extent, protecting against prostate cancer. Studies have also shown that it helps protect skin against damage caused by UV exposure.

Our bodies absorb this antioxidant more easily when it is consumed alongside fat and also when tomatoes are cooked. Since all jars and packaged tomatoes are heated during the canning process, this is one area where arguably the packaged product is better for you than the fresh, at least in terms of this anti-oxidant. I always have canned chopped tomatoes and passata in the house. This recipe is based on passata, but hides a whole load more vegetables (and therefore a whole variety of nutrients) in it also. I prepare this in huge batches and keep it in the freezer in portion sizes. It is great alongside meat or meatballs as well as a pasta sauce. Adults love it too, just up the seasoning and sprinkle a few herbs on top. Continue Reading

The perfect side dish

Subjectively titled I know, but I have called this “the perfect side dish” as, to me, that is exactly what it is.

Some deep leafy greens, some tenderstem broccoli, some cubed sweet potato and squash, coconut oil, flaked almonds  – a multi-vitamin, multi-mineral hit of vegetables with a source of good fat that allows the absorption of fat soluble nutrients.  It is so yummy! I love this side-dish alongside steak or grilled chicken for a really simple healthy meal. If you are vegetarian, adding cubed coconut-oil fried tofu and/or legumes/beans would make this a yummy balanced meal in itself.

OK, so you need to know about turmeric, people! Turmeric is a spice, traditionally used in curries, the active ingredient of which is a magic little substance called curcumin. Curcumin has been proven in multiple scientific studies to have many important health benefits, the most interesting being its anti-inflammatory effect in the human body. Long-term low-level inflammation is thought to be at the root of many diseases, including cancer and heart disease. If you aren’t doing so already, start integrating some turmeric into your life. How? I use it like ginger – it looks quite like ginger and you can have it in warm water with lemon just as you might already do with ginger. The powder form is very versatile. I have already given you a recipe for turmeric hummus. You can add turmeric to any curry-esque dish, or indeed any savoury dish. I sometimes add it to soups, dressings, sauces, vegetable side dishes or even scrambled eggs. This is a recipe for turmeric almond latte, which sounds so vile, but I think is quite yummy, especially given the yummy health benefits. I guess it might be a Scottish thing, but unless I’m eating something made with eggs, breakfast is always some kind of oat-based creation. These are eggs (perfect protein) and oats together, with a great dose of healthy fats from coconut oil and chia seeds, plus some sweetness and potassium from fresh banana.
